Peanut Butter Noodles

I've become a huge slacker when it comes to cooking.  Being a spinster, I don't see the point in making huge meals every night.  I make a big batch of brown rice on Sunday and eat veggie stir-fry every night unless I go out.  It's easy for me to eat the same thing day after day, but obviously it gets boring.  I was craving something light, but comforting so I turned to my favorite cookbook.

My ex-boyfriend's mother gave me a cookbook a few years ago called The Vegetarian 5-Ingredient Gourmet.



Even though I'm not a vegetarian, it's my favorite cookbook because the recipes require so few ingredients and don't have many steps.  One of these days I'll progress to a more elaborate cookbook, but I doubt anytime soon.  I've had my eye on the recipe for Peanut Butter Noodles for a while now and finally whipped it up this week.



Peanut Butter Noodles
adapted from The Vegetarian 5-Ingredient Gourmet.

Ingredients
8oz pasta (I used whole wheat linguini)
1/2 cup creamy peanut butter
1tbs honey
2 tablespoons teriyaki sauce
1/4 tsp ground fresh ginger
*I added chicken and frozen stir fry vegetables to make a complete meal.

Instructions:
1.  Cook the pasta according to package directions, drain and return to pot.
2.  While pasta is cooking, brown chicken and vegetables in a sauce pan until chicken is browned and vegetables are cooked through.
2.  Combine peanut butter, honey, teriyaki sauce and ginger with 1/2 cup warm water in a small mixing bowl and whisk together until smooth.
3.  Add chicken, vegetables, and peanut sauce to pasta and stir until combined.
4. Serve and enjoy!



The noodles came out warm, thick and creamy.  Adding the chicken and vegetables was a good idea because I know I wouldn't have been full off the noodles alone.

To recap:  I made dinner using more than the microwave!

I've done a version of that sauce and can definitely say it was delicious. I added red pepper flakes to mine as well and the sweet and spicy was a big win when I served it!

OMG. One of my favorite easy meals is pasta with a sauce of equal parts peanut butter and soy sauce. If I'm feeling fancy, then garlic and sesame oil and rice vinegar. And by fancy, I mean if I'm in my parents' kitchen haha.

Noodles with peanut sauce is one of my go-to meals as well. And I'm also lazy so I'm impressed with that sauce's three ingredients - I'll have to try it!

I love peanut noodles. Easiest sauce ever. And you're right- you need some extra fiber/protein in there otherwise it wouldn't be satisfying. I am one of those people who need square meals at EVERY MEAL. Damn my parents and their responsible parenting. Makes my grocery list so much longer.

Oooh, sounds great! I'm sure it had a nice Thai flavor, and I love how simple it is.

I'm going to have to try something similar very soon, because traditional pad thai or anything with crazy peanut sauce is way to complex for me hehe

I bought this cookbook a while ago. Like probably two years ago or something. You know you're lazy when you buy a cookbook featuring five ingredients as it's selling point. But, when you haven't even made a single dish from it, that's mega lazy-->me. Maybe this post will motivate me.

Sounds easy but also really interesting with good flavors. I tend to make big meals over the weekend and eat the leftovers throughout the week, but by Thursday I get tired of whatever I've made.

so one of my roommmates in college grew up eating the elephant ear pasta shells and then she carefully stuffed each one with PB...it sounded so wierd to us so she made it for us one night and it was SO good! like wierdly good. Therefore, I think this sounds like an amazing dish

ahh yes, thats a great cookbook. I like the GF 4 ingredients or less cookbook too. Simple can be delicious, right?!
